Try this healthy white pasta recipe without maida and cheese

White sauce pasta is a comfort food favourite, but it often relies on maida (refined flour) and cheese, which many people avoid for health reasons.
The good news? You can still enjoy a creamy, indulgent bowl of pasta at home using healthier alternatives without compromising on taste.
INGREDIENTS YOU WILL NEED
- Whole wheat or multigrain pasta
- 2 tbsp oat flour or whole wheat flour (instead of maida)
- 2 cups toned milk or plant-based milk (almond/soy/oat)
- 1 tbsp olive oil or butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (broccoli, capsicum, corn, carrots, beans)
- Salt, black pepper, oregano, chilli flakes (to taste)
- Heat olive oil in a pan and saut onions and garlic until fragrant.
- Add oat flour/whole wheat flour and stir for a minute to remove the raw taste.
- Slowly pour in milk while whisking continuously to avoid lumps.
- Cook until the sauce thickens and turns creamy.
- Season with salt, black pepper, oregano, and chili flakes.
- Boil whole wheat or multigrain pasta as per instructions.
- Drain and toss it into the prepared sauce.
- Add sauted or steamed vegetables for extra nutrition and texture.
