Apple Kheer (pudding) is a wonderful sweet dish that is both satisfying and light, making it an ideal treat for the Navratri fasting (Falahar) menu. It offers a creamy texture and the natural sweetness of apples, providing essential energy during your fast. Unlike traditional kheer made with rice, this recipe uses milk and apples, making it a perfect Falahari option.

Step-by-Step Recipe Instructions

 

 

Step 1: Reduce the Milk

 

  1. Pour the 1 liter of milk into a heavy-bottomed pan or pot.
  2. Bring the milk to a boil over medium heat. Once it starts boiling, reduce the heat to low.
  3. Let the milk simmer gently, stirring occasionally to prevent it from sticking to the bottom. Continue simmering until the milk has reduced by about one-third (approx. 30–40 minutes). This makes the kheer rich and creamy. Add saffron strands now, if using.

 

Step 2: Sauté the Apples

 

  1. While the milk is reducing, take the grated apples and squeeze out any excess moisture.
  2. Heat 1 tablespoon of ghee in a small pan.
  3. Add the grated apples to the ghee and sauté them for 5–7 minutes until they turn slightly soft and their color deepens slightly. This step is crucial as it prevents the apples from curdling the milk later.
  4. Remove the apples from the heat and set them aside to cool completely.

 

Step 3: Sweeten and Flavor the Milk

 

  1. Once the milk has thickened and reduced, remove the pan from the heat.
  2. Add the sugar and the cardamom powder to the thickened milk. Stir well until the sugar completely dissolves.
  3. Let the sweetened milk cool down to at least room temperature before adding the apples.

 

Step 4: Combine and Chill

 

  1. Once the milk and the sautéed apples are both cool, gently fold the sautéed apples into the milk mixture.
  2. Mix everything well.
  3. Transfer the apple kheer into a serving bowl.
  4. Garnish with chopped dry fruits (almonds and pistachios).
  5. Chill the kheer in the refrigerator for at least 2 hours. Apple kheer tastes best when served cold.
