Sugarfree Anjeer-khajoor roll: The festival of Deepawali seems incomplete without sweets, but if you want to make something special by taking care of health, then sugarfree fig-khajur roll is a great option. This dessert is made without sugar and has a natural sweetness of dates, figs and dry fruits. Along with being an easy recipe, it is both delicious and healthy, which you can also serve guests on the festival. So let’s know how you can make it at home.
- 1 cup Dates Seeded
- ½ cup Fig
- ½ cup Almond
- 4 cup Cashew
- 4 cup White mole For coating
- 2 Lamps Pistachios
- 3 Lamps Ghee
- 1 Spoon cardamom powder
Step 1: Date and Figure Creation

First of all take out dates seeds. If there is a stalk on the fig, remove it. Now cut the dates and figs into small pieces, so that it becomes easier to roast and mix them later.
Step 2: Fry fruits

Heat a heavy bottom pan or pan on medium heat. Add 1 tbsp of ghee to it. As soon as the ghee is hot, add chopped fruits (almonds, cashews, pistachios) and fry on low flame for 2-3 minutes till it becomes light golden. Keep in mind that the dry fruits do not burn. Now take them out in a plate and keep them separate.
Step 3: Frying dates and figs

Put 1 tbsp ghee again in the same pan. Now add chopped dates and figs and fry for 8-10 minutes while stirring on low flame continuously. Gradually it will become soft and become a thick paste and start leaving the edges of the pan.
Step 4: Mixing dry fruits and cardamom

When the paste is ready, add roasted fruits and cardamom powder to it. Mix everyone well so that the nuts are mixed well in the paste. Now turn off the heat and let the mixture cool slightly.
Step 5: Roll making

When lightly cooled, take out the mixture on a clean surface. Apply a little ghee on the hands and divide the mixture into 2-3 equal parts. Now shape each part cylindrical (roll). If you want, you can make them thick or thin.
Step 6: Coat with sesame seeds

Spread white sesame in a plate. Now wrap the made rolls in a mole slowly so that the sesame clings well on the roll. This will increase both the taste and look of the roll.
Step 7: Roll cutting

Keep sesame seeds in the fridge for about 1 hour so that they are set and tightened. After this, take them out and cut them into small pieces with sharp knife.
- Use soft and fresh dates. If the dates are dried, soak them in lukewarm water for 10 minutes.
- If the fig is strict, then soak them in lukewarm water and cut them, it will be easy to fry.
- Fry the dry fruits till they become light golden, they can be bitter by frying for a long time.
- Keep the amount of ghee only, there is no need to add too much ghee.
- First make the white sesame roast light dry, this increases both their taste and fragrance.
- After making the roll, keep them wrapped in butter paper or plastic rap and keep them in the fridge, this will make them set well.
- These rolls are good in the fridge for about 2 weeks in the airtight compartment, and can store it in the freezer for a long time.
- It does not require sugar because dates and figs themselves give sweetness. This is the reason why it is a healthy and natural sweetener snack.
