According to him, the reason behind this is not jaggery but two small mistakes of ours. He has guaranteed that if you make tea as per his instructions, your tea will never curdle, but will be very strong and delicious. Jaggery – one teaspoon (or as per taste) Tea leaves – one teaspoon Basil – 2 leaves Black pepper – 3 grains Green cardamom – 2 Ginger – small Piece Milk – One Cup Correct way to make tea (step-by-step): Step 1: Choose the right jaggeryFirst of all, try to use ‘desi’ jaggery without chemicals. Chemical jaggery mixed with milk can spoil the tea quickly. Step 2: First boil water and spices. Put one cup of water in a vessel and keep it to boil. While the water is heating, prepare a masala by grinding ginger, basil, black pepper and cardamom well. This spice alone will add real life to your tea. Step 3: This is the first mistake that you should not make! When the water starts boiling, add the tea leaves, crushed spices and jaggery. Now pay attention: Most of the people add milk immediately here, and this is the biggest mistake! You have to let this mixture boil well, so that the jaggery dissolves completely in water. Do not rush to add milk until the jaggery melts. Step 4: This is the second and biggest mistake to be corrected! Often we take out the cold milk from the fridge and pour it directly into the boiling tea. This sudden change in temperature (Temperature Shock) causes the milk to curdle. Correct method: Heat the milk separately in another vessel. When the milk comes to a boil, pour the hot milk into the boiling water with jaggery. Step 5: Now boil, don’t be afraid! When you pour the hot milk into the hot mixture, the tea will start boiling immediately and will not curdle. Now you can boil it for 2 to 4 minutes as per your choice. The longer you boil, the stronger the tea will become. Now strain the tea and enjoy the winter mornings!
