The world is crazy about Indian food and when we talk about Mughals, the royal style and royal food suddenly comes to mind. When the Mughals came to India, they not only brought their culture with them, they also brought their food and drink. Since the Mughals had connections from Central Asia to Persia, the food made from their mixture got the status of Mughal food. Babar laid the foundation of the Mughal Empire in India by defeating Ibrahim Lodi in the field of Panipat in the year 1526 AD. When the rule of the Mughals started, their food also started smelling like the royal kitchen. The most relished dish among these was Biryani.
Tasty Biryani
Biryani, which is eaten with relish all over the world today, was introduced to India at least by the Mughals. Biryani is a spicy rice dish, in which meat, seafood and vegetables are cooked. Apart from Basmati rice, spices like mace, nutmeg, black pepper, cinnamon, cloves, small cardamom, bay leaves, coriander, ginger, garlic and onion are generally used in Biryani. There has been a tradition of cooking it in desi ghee. It is served with curd, chutney, raita, korma, curry, boiled eggs and salad.

Now biryani with different flavors is available in different parts of India. The method of cooking biryani is also different in these areas. Due to this, they are identified according to the area. For example Hyderabadi Biryani, Kolkata Biryani, Delhi Biryani, Sindhi Biryani and Malabar Biryani. The vegetarian version of Biryani is called Tehri.
What can we say about kebabs?
The Mughals also brought kebabs with them. For this, small pieces of meat are threaded on a thread and cooked on the grill. Kebab is made from it. The Mughal rulers brought with them not just one or two but many recipes for kebabs. Among these, Seenk Kebab, Shikampur Kebab and Reshmi Kebab are quite famous. These are cooked with different types of ingredients.

Haleem or Khichda
Haleem is the gift of Mughals, which is also called Khichra in India. It is a famous dish originally from Türkiye, Iran, Azerbaijan and Northern Iraq. Today it is very popular in many cities of India like Hyderabad, Telangana, Aurangabad and Maharashtra. It is prepared from wheat, pulses, barley, different spices and minced meat. It takes seven-eight hours to cook it.
The thick gravy prepared by cooking with similar spices is called curry. The Mughals also brought this with them. It is used in both vegetarian and non-vegetarian dishes. Chicken curry and egg curry are quite famous. Many different types of curry recipes are the gift of the Mughals.

Navratan Korma, a gift from the Mughals, is a dish which is made in both vegetarian and non-vegetarian ways. It is cooked by mixing nine different ingredients. Actually this is a very tasty curry dish. A lot of dry fruits, vegetables, fruits, cream and aromatic spices are added to it. Another favorite dish of the Mughals is Murgh Musallam. In this, a whole chicken is cooked stuffed with eggs, tomatoes, onions, ginger, saffron, cinnamon, poppy seeds, cloves, chilli and spices like cardamom. Dishes like mutton pasand and rogan josh are also considered to be the contribution of Mughals.

Who would believe that the Mughals brought with them the roti made in every house? Generally, rotis made of wheat flour rolled into rounds and cooked on a pan are served with vegetables. Similarly, Mughlai Paratha is also discussed a lot. Actually, Mughlai Paratha is delicious and soft fried paratha. It is prepared by filling wheat flour with minced meat, egg, onion, green chilli and black pepper and many other ingredients. The most popular street food in Bengal today is Mughlai Paratha.
Sherbet and ice cream
Be it the soothing sherbet in summers or the children's favorite ice cream, both are the gifts of the Mughals. Sherbet is made by mixing fruit juice, sugar and water. The Mughals brought with them many methods of making sherbet. Along with rose, saffron, many other flavors are also used in sherbet. Similarly, ice cream prepared by mixing different flavors and dry fruits etc. with milk and sugar is liked by everyone from children to adults. It was the Mughals who introduced us to the taste of ice cream, one of the most favorite and popular desserts.

The Mughals also brought many types of sweets with them. One of these popular sweets is Gulab Jamun. For this, Khova Mawa is prepared from milk. Then it is fried in desi ghee and dipped in syrup. Apart from this, paan, which is eaten in different ways today, was also used as a sweet by the Mughals. It was consumed as a digestive after meals. Sweets like Sheer Khurma and Shahi Tukda are also the contribution of Mughals.
