In India, winter means sweetness of jaggery… from sesame papdi, rewari, laddu to countless number of sweets made from jaggery and sesame which make this season even more special. Jaggery strip reminds me of childhood. This winter, you can make crispy sesame and jaggery sesame papdi at home, which your children will like very much and it will also be beneficial for health. You may find it a little difficult to make it, but it is not such a big task. You can easily make Til Papdi at home. You just need a little patience. The crunchy it is, the quicker it melts in the mouth, hence everyone from children to the elderly can eat it.

In most Indian homes, sweets are eaten after meals and if it is winter, eating a small piece of jaggery is considered the best. For sweet cravings, you can make Til Papdi which will also have the sweetness of jaggery. It can also be given to children in small quantities during the day. Know how many nutrients you will get from it and how to make it.

Sesame and jaggery are nutrient rich

According to the US Department of Agriculture, 100 grams of sesame contains 20.4 grams of protein. Apart from this, it is a good source of fiber. Many other nutrients are also found in sesame, including iron, phosphorus, potassium, zinc, copper, manganese, selenium, some vitamins of B complex, a small amount of vitamin A, 1.68 mg of vitamin E in 100 grams of sesame. Talking about jaggery, it is also a source of many minerals including calcium and iron. Both these things are of hot nature, hence they are more beneficial in winter. Ingredients for Jaggery Til Papdi

To make Jaggery Sesame Papdi, you will need one-fourth cup of sesame seeds, one teaspoon of desi ghee, one-fourth cup of jaggery (crushed or powdered) i.e. equal quantity of sesame seeds, apart from this you will need a little pistachio for garnishing.

Jaggery Sesame Papdi Recipe

  • First of all, dry roast the sesame seeds in a thick bottom pan so that the rawness goes away and crunchiness comes.
  • Fry the sesame seeds in the pan until they become light golden. During this time, keep the flame low and keep stirring the sesame seeds continuously.
  • When the sesame seeds are roasted, take them out in a plate and keep them to cool. If you leave the sesame seeds in a hot pan, they may burn from below.
  • After the sesame seeds are roasted, the second step is to melt the jaggery. Melt ghee in the pan and add jaggery.
  • Cook the jaggery on low to medium flame for 5 minutes until it melts completely.
  • Cook until bubbles appear in the jaggery and then take water in a bowl and drop a few drops of jaggery in it. If it becomes like candy then understand that the jaggery is ready.
  • After the jaggery is cooked, immediately add roasted sesame seeds to it and stir well with a ladle so that a fine mixture is prepared.
  • Now you have to grease a little ghee on a silicone mat or parchment paper and spread the mixture on half of it and spread finely chopped pistachios on it.
  • Turn the remaining part of paper over the mixture and then quickly roll it into a thin crust with the help of a rolling pin. It has to be kept in the thickness of the roti.
  • After this, remove the paper and let the papdi air out a little. In this way your crunchy sesame papdi will be ready.

After adding jaggery and sesame seeds, roll the papdi quickly, that is, do not let it cool down. Keep a silicone mat or parchment paper ready in advance by greasing it. Place the sesame papdi in the middle of the parchment paper and store it in an airtight container, so that it remains crunchy.
