What do you need to make Lemon Rice?
Cooked rice: 2 bowls (leftover rice works best)
Lemon juice: 2 tablespoons
Peanuts: a handful (roasted)
Tempering: Mustard seeds, curry leaves, and green chilies
Turmeric powder: half a teaspoon (for a beautiful yellow color)
Salt: to taste
Oil or ghee: 2 tablespoons

Easy method to make Lemon Rice:
First, heat oil in a pan. Add mustard seeds; when they start to splutter, add curry leaves and green chilies.
Now add the peanuts and fry until lightly golden brown. Remember, the crunchiness of the peanuts is the soul of this dish.
Reduce the heat and add turmeric powder. Make sure the turmeric doesn't burn, it should just release its color.
Now add the cooked rice and salt. Mix it very gently so that the rice grains don't break.
Then turn off the gas. Finally, add the lemon juice and mix well. Adding the lemon juice after turning off the gas prevents it from becoming bitter.
If you want to make it even more delicious, you can also add a few cashews to the tempering. Serve it with papad or yogurt, and those who eat it will be licking their fingers!
