First of all, mash the boiled potatoes well. After this, heat butter in a deep pan. When the butter melts, add garlic and onion and fry on low flame, until the onion becomes light golden.

Now add flour to it and keep stirring on low flame for about a minute, so that the rawness of the flour goes away. After this, slowly add milk and stir continuously, so that lumps do not form in the mixture. When it starts thickening a little, add mashed potatoes and vegetable stock to it.

Let the soup cook on medium flame for about 8 to 10 minutes. Finally add salt, black pepper and fresh cream and mix well. Switch off the gas and garnish the soup by adding green coriander or spring onion on top.
