Ingredients for Making Tiranga Dhokla:
Semolina – 1 cup
Yogurt – ½ cup
Baking soda – ½ teaspoon
Spinach paste
Saffron food color
Green food color
Green chilies
Salt
Oil
Method for Making Semolina Tiranga Dhokla:
To make Tiranga Dhokla, first, mix semolina and yogurt in a bowl to prepare a smooth batter.
Now, add salt and a little sugar and let the batter rest for 15-20 minutes so that the semolina swells slightly.
After that, add baking powder or Eno fruit salt to the batter and mix gently.
Now, divide the batter into three parts. Add turmeric to the first part to create the saffron color, leave the second part without any color, and add green food color to the third part to create the green layer.
Next, boil water in a steamer and lightly grease the dhokla tray or plate with oil.
First, pour the saffron batter into the tray and spread it evenly, then add the white batter on top, and then the green batter to create the tricolor.
Place the tray in the steamer and steam the dhokla over medium heat for 15-20 minutes.
After steaming is complete, let the dhokla cool slightly and then remove it from the tray. How to prepare the tempering:
Heat oil in a pan, add mustard seeds, curry leaves, and green chilies, and sauté them. Pour this tempering over the dhokla.
Sprinkle fresh coriander leaves on top for enhanced flavor and appearance.
Now cut it into small pieces and serve with green chutney or sweet chutney.
The tricolor semolina dhokla prepared using this method is light, delicious, and visually appealing.
Make sure the batter is neither too thin nor too thick, and pre-boil the water in the steamer so that the dhokla rises properly.
