January has officially ended and if you're determined to continue those healthy habits you kickstarted at the beginning of the year, it doesn't mean you have to compromise on taste. Recipe creator Ruth Anne Bigley recently shared how you can whip up a delicious mousse cake using just two ingredients.
All you need is some dark chocolate and oranges for a cake that "melts in your mouth". It also requires minimal effort and a little bit of patience while the mousse cake sets. In a recent TikTok video, Ruth said: "I'm back with another two-ingredient chocolate mousse cake, and this one just might be my favourite. It's made with just dark chocolate and oranges."
A benefit to Ruth's recipe is that anyone can enjoy it, as it just happens to be both gluten and dairy-free. There's also no added sugar, for anyone watching their sugar intake.
Ruth's video has been viewed over 129,100 times, receiving 5,067 likes and 45 comments. Domceek wrote: "I just made it and it's freaking delicious! Thanks for the recipe."

Gino suggested: "Pro tip: chocolate can be whipped up using any kind of liquid or puree. So really any fruit will do. If choosing a liquid just dial back the ratio so that it doesn't get too watery and you're good to go."
So if you're looking for a minimalist dessert that needs hardly any effort, this is how you can recreate Ruth's recipe at home.
Two-Ingredient Chocolate Mousse CakeIngredients
- Two large oranges
- 9oz (255g) dark chocolate
Method
Prep the oranges: Wash the oranges and slice off the rinds. Separate the segments and add them to a pot.
Cook: Cover the orange segments with water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes.
Drain and cool: Strain the oranges and let them cool slightly.
Melt the chocolate: Melt the chocolate using a double boiler (or the microwave).
Blend: Add the drained orange segments and melted chocolate to a high-speed blender. Blend until completely smooth and mousse-like. (A food processor or immersion blender should also work.)
Set: Pour the mixture into a parchment-lined loaf pan and top with chopped dark chocolate and orange zest.
Chill: Refrigerate for several hours, or until firm and set.
Serve and Store: Remove from the pan, slice into squares, and enjoy! Keep leftovers in an airtight container in the fridge.
