This snack, which has a special identity in Gujarati cuisine, has now become popular all over the country. Its soft texture, mild sweetness and spicy tadka make it special.

Amiri Khaman is very attractive not only in taste but also in appearance. The sev, pomegranate seeds and green coriander added on top give it an even richer look. The special thing is that it is not difficult to make. With a little preparation, you can prepare market-like Amiri Khaman at home.

    • 2 cups gram flour

 

    • 1 cup curd

 

    • 1/2 cup water (as needed)

 

    • 1 tsp ginger-green chilli paste

 

    • 1 tsp sugar

 

    • salt as per taste

 

    • 1 tsp lemon juice

 

    • 1 tsp fruit salt (or 1/2 tsp baking soda)

 

for tempering

    • 2 tbsp oil

 

    • 1 tsp mustard

 

    • 1 tsp white sesame seeds

 

    • 8-10 curry leaves

 

    • 2 green chillies (cut lengthwise)

 

for garnish

    • fine sev

 

    • pomegranate seeds

 

    • chopped coriander

 

    • grated coconut (optional)

 

How to make Amiri Khaman

prepare the batter
Add gram flour and curd in a large bowl. Add ginger-green chilli paste, salt, sugar and lemon juice to it. Prepare smooth and slightly thick batter by adding water as required. Keep in mind that there should be no lumps in it.

Preparation for steaming
Heat water in a steamer or large vessel. Finally add fruit salt to the batter and mix lightly. Immediately put it in a greased plate.

Steam Khaman
Place the plate in a steamer and cook on medium flame for 15-20 minutes. Check by inserting a toothpick – if it comes out clean then the Khaman is ready. When it cools down, crumble it lightly.

add seasoning
Heat oil in a pan. Prepare tadka by adding mustard seeds, sesame seeds, curry leaves and green chillies. Pour this tadka on crumbled khaman and mix gently.

Garnish and serving
Now add sev, pomegranate seeds, green coriander and coconut on top. Your delicious Amiri Khaman is ready. Serve it with green chutney or sweet chutney.
