Garlic Chilli Noodles Recipe: If you reach home late at night after office, or return from the club tired after a weekend outing and feel like eating something quick, but very tasty and filling, then hot garlic-chili noodles can become your best friend. This recipe is so easy that it can be made in just one pot in less than 15 minutes. The taste is so amazing that it feels like you have ordered it from a good Chinese restaurant. It has such a wonderful flavor of garlic, hot chilli and sesame seeds that the mind becomes happy after eating the first bite.
The trick of frying the spices by adding hot oil awakens all the flavours. The sauce made by mixing light soy sauce, rice vinegar and veg oyster sauce gives a delicious taste to the noodles. After eating these noodles, the mind feels relaxed and the stomach also gets filled well. The special thing is that you can easily make it in as little or as much quantity as you want. If you want to eat alone then it is a little, if you want to eat for two-three people then it is a little more. Hot Garlic-Chili Noodles Recipe (In 15 Minutes)
Ingredients (for 2 people):
- 2 green onions (scallions), finely chopped
- 4 garlic cloves, very finely chopped
- 2-3 red chillies, finely chopped (you can use more or less as per your spicy preference)
- ½ tsp Korean chili flakes (gochugaru) – this is optional but adds a lot of flavor
- 3 tbsp rice bran oil or any high heat oil
- 2 tbsp vegetarian oyster sauce
- 1.5 tbsp light soy sauce
- 1 tablespoon rice vinegar
- 1 tsp sugar
- ½ tbsp sesame oil
- Fresh coriander, finely chopped for garnish
Easy method to make:
1. Pour water in a big vessel, add salt and boil well. Cook the noodles as directed on the packet (most noodles cook in 4-6 minutes). When the noodles become soft, drain the water. Then wash lightly once with cold water so that the noodles stop cooking further and do not stick together. Keep it in a sieve and keep it aside.
2. In a medium sized bowl, add chopped green onion, finely chopped garlic, chopped red chilli and Korean chilli flakes. Don’t mix anything yet, just leave it aside.
3. Put rice bran oil in a small pan and heat it on medium flame. Heat the oil so much that light smoke starts coming out, but do not burn it too much. When the oil gets heated well, carefully pour it on the garlic-chili ingredients kept in the bowl. You will hear a loud sound of ‘chichichichi’ and the aroma of garlic and chilli will spread throughout the kitchen. Mix lightly with a spoon. Due to the hot oil, garlic and chillies will gradually soften but their taste will not burn at all.
4.Now add veg oyster sauce, light soya sauce, vinegar and oil in the same bowl. Mix well. Now taste it and if you like it more spicy then you can add some more chilli. If you want salty taste then add some more soy sauce. Let the sauce cool for 1-2 minutes.
5. Add the cooked and cooled noodles to the bowl with the sauce. Mix well so that the sauce coats each noodle thoroughly. The noodles will be shiny, garlicky and mildly spicy. Now take them out in a serving bowl. Sprinkle freshly chopped coriander on top.
6. These noodles taste most delicious when hot and fresh. When you come home late at night and eat these spicy, garlic-chilli noodles, all the tiredness will disappear completely. Less utensils, less effort and rich taste are the biggest advantages of this recipe.
Tip: If you like spicy food then you can increase the quantity of red chillies and if you are making it for children then reduce the quantity of chillies.
