- 1 cup basmati rice
- 2 cups of water
- 2 tbsp oil or ghee
- 1 bay leaf
- 1 piece of cinnamon
- 2-3 cloves
- 2 Cardamoms
- 1 tsp cumin seeds
- 1/2 tsp mustard
- 8-10 cashews (optional)
- 1 onion (thinly sliced)
- 2 green chillies (chopped)
- Salt to taste
- A little cilantro for garnish
Make a spicy raw onion chutney to add to the food, a dish that both children and adults will enjoy.

- First wash the rice and soak it for 20-30 minutes.
- Heat oil or ghee in a pan or cooker.
- Add mustard, cumin and saute.
- Then add the bay leaves, cinnamon, cloves and cardamom and return to a low flame so that their aromas come out.
- Now add cashews and saute until light golden.
- Add chopped onion and green chillies and cook till the onion becomes transparent.
- Drain the soaked rice and add to the pan and stir gently for 1-2 minutes.
- Now add water and salt to it and mix well.
- Cover and let the rice cook on medium heat. (Take 1-2 whistles if using cooker.)
- When the rice is cooked, stir gently and garnish with cilantro on top.
- Serve hot with bagara rice raita, chilli ka salan, dal or any gravy.
- The taste is better if ghee is used for more aroma.
- Using basmati rice makes the rice grainy and light.
- Spices should not be over roasted, otherwise the taste may become bitter.
