The story of the cheesecake begins with a wonderful coincidence. In 1872, William Lawrence, a New York dairyman, was attempting to make a French cheese called ‘Neufchatel’ and accidentally added more cream to the mixture than was necessary, giving rise to the modern ‘cream cheese’. This became the secret ingredient that gave this dessert a dense and velvety texture unlike other cheesecakes around the world.

Although the history of this cheesecake goes back to ancient Greece, ‘New York Style Cheesecake’ got its real identity in the 1920s and 30s. Arnold Reuben, owner of Reuben’s Restaurant, is considered the father of the modern New York style cheesecake. He made generous use of cream cheese and prepared a recipe which soon became the favorite recipe of the entire city.

Nowadays, cheesecake is not just a dessert but a feeling for New York City. Some prestigious institutions of the city are still keeping this tradition alive.
Junior’s Restaurant, founded by Harry Rosen in 1950, is famous throughout the world for its cheesecakes with a classic sponge cake base. Jewish Deli Lindy’s
Popularized the culture of serving cheesecake with coffee.

It is heavier, creamier, and denser than other cheesecakes such as Chicago or Italian style. It uses heavy amounts of cream cheese and eggs, giving it a unique ‘tangy’ taste and smooth finish. Presently this Cheesecake not only reflects the taste of the city but also highlights its glorious culinary history. Today it has become a cheesecake found at every turn on the streets of New York.
