How to make Lauki Raita
Bottle gourd raita tastes very tasty. To prepare this, first boil the grated bottle gourd with light salt for 5-7 minutes. When the gourd becomes soft, filter it and let it cool. Keep in mind that there should not be too much water in the gourd.
Beat the curd well in a bowl, so that there are no lumps in it. The texture of curd should be smooth and creamy. Now add roasted cumin powder, black salt, common salt and green chilli to the whipped curd and mix well. With this the base of raita will be ready.
Now add the boiled and cooled bottle gourd to the curd mixture and mix slowly, so that all the ingredients get blended well. Garnish by adding green coriander and a little red chilli powder on top. Serve chilled bottle gourd raita, it will double the taste of the food.
