While the chemical-based cold drinks available in the market may offer temporary relief from the heat, they ultimately cause harm to our health. If you are looking for something natural, delicious, and healthy to beat this scorching heat, 'Khas ka Sharbat' (Vetiver Sherbet) is the perfect drink for you.

In fact, Vetiver (Khas) is known for its extremely cooling properties. Its sherbet not only instantly quenches your thirst but also effectively soothes internal body heat and cools the stomach. Let's discover the easiest way to prepare pure Khas ka Sharbat right at home—a version that tastes even better than the store-bought varieties.

**Ingredients Required to Make Khas Syrup**
**Vetiver (Khas) Roots:** 50 grams (Easily available at any grocery store or Ayurvedic herb shop)
**Sugar:** 2 cups
**Water:** 4 cups (For boiling)
**Lemon Juice:** 1 to 2 teaspoons (Helps preserve the sherbet for a longer duration)
**Green Food Color:** 2-3 drops (Completely optional—use only if you desire the exact green color found in market-bought versions)
**Ice Cubes:** For serving

**Easy Method to Prepare Khas ka Sharbat**
First, thoroughly wash the Vetiver roots under running water to remove all traces of soil and dust. Next, take a vessel filled with clean water and soak the Vetiver roots in it overnight (or for at least 8–10 hours).

The following morning, place the Vetiver roots—along with the same water they were soaked in—into a heavy-bottomed vessel on the stove. Let it boil vigorously over medium heat for 15 to 20 minutes. This process ensures that all the cooling properties, aroma, and essence of the Vetiver are fully infused into the water. Afterward, turn off the heat, strain the liquid, and set the roots aside.

Now, in a separate vessel, combine 2 cups of sugar with a small amount of water and place it on the stove. Cook this mixture until the sugar has completely dissolved and a slightly thick syrup (sugar syrup) has formed. Once the sugar syrup is ready, add the strained Khus water to it. Let it cook for another 2–3 minutes to ensure everything blends thoroughly. Turn off the heat and allow the mixture to cool down completely.

Once the mixture has cooled, add one or two teaspoons of lemon juice. The lemon juice will not only enhance the flavor but also prevent the syrup from crystallizing or spoiling. If you desire a store-bought look, you may add 2–3 drops of green food coloring.

Your pure, thick, and homemade Khus syrup is now ready. Pour it into a clean glass bottle and store it in the refrigerator. It remains fresh for months.

Whenever someone returns home from the scorching heat, or whenever you simply crave a refreshing cold drink, pour 2 to 3 teaspoons of the Khus syrup into a glass, add a few ice cubes, and top it up with chilled water. Stir well with a spoon and enjoy this cooling, refreshing beverage.
