Mushroom is rich in many important nutrients like Vitamin D, fiber and protein. Although many people do not like its mild taste, everyone can like this dish prepared with the right spices and creamy sauce. The most special thing about this recipe is that instead of heavy cream, high-protein paneer is used in it. This not only makes the dish more nutritious, but also increases the amount of protein in it. The freshness of the light lemon juice and the rich flavor of the mushrooms make it a great choice for breakfast, brunch or a light meal. Let us know the easy recipe of making creamy lemon mushroom.

Material

Button Mushroom- 250 grams (cleaned and sliced)
Paneer-150 grams
Curd-2 tbsp
Olive oil or butter – 1 tbsp
Garlic cloves – 3–4 (finely chopped)
Small onion-1 (finely chopped)
Black pepper powder-1 tsp
Chili flakes-½ tsp
Mixed herbs or oregano – 1 tsp
Lemon juice – 1–2 tbsp
salt-as per taste
Green coriander or parsley – 1 tablespoon finely chopped

Method

  1. Prepare a smooth paste by adding cottage cheese, curd (if using) and 2–3 tablespoons water in a mixer.
  2. Heat olive oil or butter in a pan. Add garlic and onion to it and fry until it becomes light golden.
  3. Now add the mushrooms and cook on high flame for 5–7 minutes, until their water dries up and they become light golden.
  4. Add salt, black pepper, chili flakes and mixed herbs to it and mix well. Add the prepared paneer paste in the pan and cook on low flame for 2-3 minutes. If needed, prepare desired thick gravy by adding some water.
  5. Just before turning off the gas, add lemon juice and mix well. Garnish by adding green coriander or parsley on top.

Serving Method: Serve Creamy Lemon Mushrooms hot with toast, multigrain bread, garlic bread, roti or brown rice. It’s a delicious and high-protein option for breakfast, brunch or a light dinner. If desired, it can be made more nutritious by adding spinach, capsicum or boiled broccoli to it.
