Ingredients (Makhana Khichdi)
Makhana-2 cups
Boiled potatoes-2 (chopped)
Ghee-2 tbsp
Cumin seeds-1 tsp
Green chillies-2-3 finely chopped
Some curry leaves (if using during fasting)
Rock salt-1 tsp
Black pepper powder-half tsp
Roasted cumin powder-a little
Roasted peanuts-2 tbsp (coarsely ground)
Finely chopped coriander
leaves A little lemon juice to enhance the taste
Method
- First, add a little ghee to a pan and fry the makhanas over low heat for 4-5 minutes. When the makhanas become crispy, remove them.
- Now, heat ghee in the same pan and add cumin seeds. When the cumin seeds begin to crackle, add the green chilies and curry leaves and fry for a few seconds.
- Then add the chopped boiled potatoes and cook until lightly golden. Add rock salt, black pepper, and roasted cumin powder and mix well.
- Then add roasted makhana and coarsely ground peanuts and cook all the ingredients on low flame for 2-3 minutes while stirring, so that the taste of the spices mixes well.
- Finally, turn off the heat and add coriander leaves and a little lemon juice. Your hot and delicious makhana khichdi is ready. Serve it with yogurt or fasting chutney.
