Tuna sandwiches will be creamier if you add one ingredient to the filling

Ingredients:

  • Your bread of choice
  • One tin of tuna chunks or steak
  • 65g mayonnaise
  • 25g crème fraîche
  • 15g spring onions, sliced
  • 15g diced gherkins
  • 10g diced capers
  • Half a lemon, juice only
  • 2g chopped dill
  • Salt and cracked black pepper to taste

Method:

Start by weighing all your ingredients and dicing the spring onions, gherkins, capers, and dill.

Then, in a bowl, mix together all your chopped ingredients with the mayonnaise, crème fraîche, lemon zest, and one can of tuna.

Season with salt and pepper to taste before layering the tuna mixture on your bread of choice, and squeeze the lemon juice on top.

Adding crème fraîche to tuna mayo makes a surprisingly delicious difference. Its light, creamy texture and subtle tanginess balance the richness of the mayonnaise, creating a lighter and more refreshing tuna filling.

It adds a subtle sharpness that works perfectly with the other ingredients, such as the onion, gherkins and capers.

You can also use Greek yoghurt instead of mayonnaise to create a refreshing tuna filling. It has a much lighter consistency and a slight acidity that makes tuna taste more savoury while also brightening the flavours of any vegetables in the sandwich.

It pairs well with celery and red onion, and only needs a little lemon and some seasonings to make it suitable.
