Ghevar is a famous sweet of Rajasthan, which is made and eaten especially on the occasion of Sawan and Teej. Its unique lattice texture and taste make it different from other sweets. Ingredients to make Ghevar at home
You don't need a lot of ingredients to make ghevar. For this the following things are required:
- 2 cups flour
- 4 tbsp ghee
- about 4 cups cold water
- half cup milk
- 1 cup sugar
- 2-3 cardamoms
- Ghee or oil for frying
- Almonds and pistachios for garnishing
- If desired, add rabri or cream on top

To make Ghevar, it is necessary to first prepare the batter. For this, take ghee in a big vessel and add 2-3 ice cubes in it and beat it well. When the ghee starts appearing light and creamy, gradually add flour to it.
Now add cold water and keep beating continuously. After this add milk and then add water. Keep the batter so thin that it can easily fall from the spoon in a stream. If the solution seems thick, add a little more cold water.

Take a deep and wide pan or vessel and add ghee or oil to it and heat it well. To make Ghevar, it is important to have a deep vessel because oil or ghee may come up while pouring the batter. When the ghee becomes hot, take a little solution in a spoon or small bowl and pour it in a thin stream, keeping it about 1-2 feet above the middle of the pan.
Wait for a few seconds after pouring the solution. When the bubbles subside, add some batter again. Similarly, the solution can be added 4-5 times. Before pouring the batter every time, keep the space in the middle slightly open so that the mesh structure of the ghevar remains. Now cook it on medium flame until it becomes golden and crisp. When ready, take it out carefully and keep it for some time so that the excess ghee gets removed. Then prepare light syrup by adding sugar and some water in a pan. Cardamom can be added to it. Pour light hot syrup on the prepared ghevar, but do not add too much syrup, otherwise the crispiness of the ghevar may reduce.
Ghevar Decoration
If you like creamy ghevar, top it with cold rabri. After this, garnish it by adding chopped almonds, pistachios and some cardamom. If you wish, you can also add a few threads of saffron on top.
Things to keep in mind while making ghevar
While making Ghevar, keep in mind that the batter should be thin and the ghee or oil should be well heated. Always pour the batter in a thin stream and do not pour too much at once. Leave some time between each layer so that the mesh can be formed properly. Also, be careful while pouring the batter into the pan, as hot ghee or oil may splash.
