Tips and Tricks:
Use very ripe bananas: The darker and ripe the bananas are, the sweeter and tastier the muffins will be. Green or under ripe bananas do not have that taste.
Do not over-mix the batter: This is the most important tip. After mixing the dry and wet mixture, do not overbeat the batter. Doing this can make the muffins hard and rubbery. Just mix gently.
Material Temperature: The temperature of wet ingredients like milk and oil/butter should be at room temperature. This makes the batter better and the muffins bake evenly.
Coat the Chocolate Chips: Coat the chocolate chips in a little dry flour before adding them to the batter. By doing this they will not settle in the bottom of the muffin during baking and will remain evenly throughout the muffin.
Correct Baking Time: Every oven is different. Therefore, bake as per the prescribed time and do the toothpick test after 20 minutes. Overbaking can result in dry muffins.
