Garam masala is one of the most important things to enhance the taste of homemade food. Instead of ready made spices available in the market, you can easily prepare it at home also. Roasting whole spices lightly on low flame further enhances their aroma and taste.

After this, by grinding them, spicy or mild masala can be prepared as per your choice. This homemade masala will be useful in enhancing the taste of vegetables, lentils, paneer, chickpeas and gravy dishes.

Ingredients for making Garam Masala

  • Toor dal – 100 grams
  • Whole coriander – 60 grams
  • Cumin – 40 grams
  • Black pepper – 20 grams
  • Dry red chilli – 20 grams
  • Sesame – 20 grams
  • Curry leaves – 10 grams
  • Fenugreek seeds – 10 grams
  • Turmeric powder – 10 grams
  • Dry mango powder – 20 grams
  • Black salt – 10 grams
  • Salt – 10 grams
  • Asafoetida – 5 grams

Easy method of making garam masala
1. Fry whole spices separately
First of all, clean the whole spices like coriander, cumin, black pepper, fenugreek seeds, dry red chilli and sesame seeds. Fry them separately on low flame. The spices should not burn, otherwise the taste may become bitter.

2. Fry lentils and curry leaves also
Lightly fry toor dal and curry leaves. Fry the curry leaves until their moisture evaporates completely. After this, let all the roasted spices cool completely.

3. Grind the spices
When all the things cool down, put them in the mixer and grind them finely. If you want to keep the spices a little coarse, stir the mixer at intervals of a few seconds instead of continuously.

4. Mix the remaining ingredients
Now add turmeric powder, mango powder, asafoetida, black salt and common salt and mix well. You can also filter the prepared spice once, so that its powder becomes uniform.

5. Keep in an airtight container
After the garam masala cools completely, store it in a dry and clean airtight container. Avoid moisture from entering the container and always use a dry spoon to take out the masala.
