Ingredients needed to make Nankhatai
Mendo: 1 cup
Gram flour: half cup
powdered sugar: half cup
Pure Ghee: Half cup (should not be very melted)
Baking Powder: 1/2 teaspoon
cardamom powder: 1/4 teaspoon
For garnishing: chopped almonds and pistachios

First of all, take flour, gram flour and baking powder in a big vessel and mix them properly. Now add powdered sugar and cardamom powder to it. Then slowly add ghee to it and mix the entire mixture with hands. Gently shape the dough into a dough. Keep in mind that the dough should not be tied tightly. Add some ghee only if the mixture seems rough. Make small balls from the prepared mixture. Place each loaf between your palms and press gently to give it a round and slightly flat shape. You can make cross marks on it with a knife. Now apply chopped almonds and pistachios on it. Pre-heat the oven at 170 to 180 degrees Celsius. Arrange all the nankhattis on the baking tray, keeping them spaced apart. Now put these trains in the oven and bake for 12 to 18 minutes. When the halwa starts turning golden brown on top, take out the tray.

Serving and storage method
After taking out from the oven, let the nankhatai cool at room temperature for a while. Its original crunchy and soft texture will appear only after it cools down. You can serve this Ghargatthu Naankhatai with hot tea or milk. If you want to store it, then after it cools completely, you can store it in an air-tight container. If you protect it from moisture, this Naankhatai will remain fresh and crispy for many days.
