Halved Lemons Dry Out in the Fridge? Try This 1 Simple Trick

Lemons are a kitchen staple, but you don’t always need an entire lemon at once. You may squeeze a few drops into tea, add some juice to a salad or use it to brighten up a vegetable dish. The problem starts when the remaining half is left in the refrigerator.

After a few days, the cut surface can become dry and hard, while the lemon may lose some of its fresh citrus aroma. The good news is that one simple storage trick can help slow this process.

Wrap the Cut Side in Aluminium Foil

The easiest trick is to cover the cut surface of the leftover lemon tightly with aluminium foil before placing it in the refrigerator.

Once a lemon is cut, its juicy interior is exposed to air. This encourages moisture loss, which is why the cut surface gradually becomes dry. Covering it creates a barrier that reduces exposure to the dry refrigerator air and also helps protect the lemon from absorbing strong smells from other foods.

How to Do It

  1. Cut the lemon and use the amount you need.
  2. Take the remaining half and make sure the cut surface is clean.
  3. Place aluminium foil directly over the exposed, cut side.
  4. Press the foil around the lemon so the cut surface is well covered.
  5. Place the wrapped lemon in the refrigerator.
  6. Use it within a few days and check for mould, an unusual smell or a visibly spoiled texture before using.

Why Does This Trick Work?

The thick peel protects an uncut lemon from moisture loss. Once you slice it, that natural protection is broken and the exposed flesh can gradually lose water.

A covering such as foil reduces direct contact between the cut surface and the surrounding air. It can therefore help the lemon remain juicier and retain its fresh aroma for longer.

It also helps reduce exposure to strong refrigerator odours from foods such as onions, garlic and leftovers.

Don’t Have Aluminium Foil? Try These Alternatives

You don’t have to rely on foil. An airtight food container is another good option. Place the lemon cut-side down inside the container and close the lid tightly. A reusable silicone citrus cover is another practical alternative.

Cut lemons should always be refrigerated rather than left at room temperature for extended periods. Properly covered cut citrus can remain usable for several days, but it should always be checked for signs of spoilage before consumption.

A Small Trick That Can Reduce Food Waste

If you regularly use only half a lemon at a time, don’t leave the other half exposed in the refrigerator. Cover the cut side tightly with foil or use an airtight container, refrigerate it promptly and use it soon.

This tiny kitchen habit can help preserve the lemon’s moisture, texture and fresh citrus aroma while making sure less of the fruit ends up in the bin.
