Materials:

  • Chicken (leg piece/thigh piece) – 500 gms
  • Curd – 1 cup (thick)
  • Ginger-garlic paste – 2 tbsp
  • Red Chilli – 2 tsp
  • Kashmiri Red Chillies – 1 tsp
  • Turmeric – ½ tsp
  • Coriander cumin powder – 1 tsp
  • Garam masala – 1 tsp
  • Lemon juice – 2 tbsp
  • Salt – as per taste
  • Oil – 3–4 tbsp
  • Chaat Masala – A pinch (for serving)

Action:

  • For this, first wash the chicken and make deep cuts on it with a knife. This infuses the marination and makes the chicken tender.
  • In a large bowl, add curd, ginger-garlic paste, red chillies, Kashmiri chillies, turmeric, coriander-cumin powder, garam masala, lemon juice, salt and oil and mix well. Add the chicken to this mixture and apply the masala to each piece.
  • Cover the chicken and refrigerate for at least 4 to 6 hours (overnight if you want more flavor).
  • Heat a heavy pan and add some oil. Place the marinated chicken on the pan. Cover and cook the chicken on medium heat.
  • Keep turning the chicken every 5-7 minutes. Cook until the chicken is fully cooked and nicely browned on both sides.
  • After the chicken is cooked, place a small bowl in the center of the pan. Put burning charcoal in it and a little on it
  • Add ghee. Immediately cover and keep for 2–3 minutes. This gives tandoori chicken a tandoor-like smoky flavor.
  • Sprinkle some chaat masala on the tandoori chicken. Serve hot with onion, lemon wedges and green chutney. This tandoori chicken goes well as a starter or with roti-naan.
