Nag Panchami Special, Kaju Rabri Recipe
Material (Nag Panchami Special, Kaju Rabri Recipe)
- Full Cream Milk – 1 liter
- Cashew-20-25 (finely chopped or coarse ground)
- Sugar-3-4 tablespoons
- Cardamom Powder – ½ tsp
- Saffron threads – 4 to 5
- Rose water – 1 tsp (for alternative, fragrance)
- Clicked almonds and pistachios – for decoration

Method (Nag Panchami Special, Kaju Rabri Recipe)
- Put milk in a heavy bottom pan and boil it on medium flame. When the milk starts boiling, then cook it on low flame and keep stirring continuously so that the milk does not appear in the bottom.
- Cook the milk until it remains about half. This is necessary for the thick texture of Rabri.
- Now add chopped or coarse cashew nuts and mix well. Cook for 5-7 minutes so that cashews become slightly softened and also taste the milk.
- Now add sugar and cook till it dissolves. Then cardamom powder, (if you are adding) mix saffron thread and rose water.
- When Rabri becomes thick and all the ingredients are mixed well, then turn off the heat. Keep it in the fridge to cool down.
- Take out the cold rabri in a serving bowl and decorate it by adding chopped almonds and pistachios.
- If you want, first fry cashews in a little ghee, this increases the taste even more.
- You can serve Rabri in both hot or cold, but cold rabri is more preferred on festivals.
