Method to make Paneer Kheer at home: Ingredients: Paneer – 200 grams (grated or mashed well with hands) Milk – 1 liter (full cream) Sugar – 1/2 cup (you can increase or decrease as per your taste) Cardamom powder – 1/2 small Tablespoon saffron – few threads (soaked in hot milk) Mix dry fruits (almonds, cashews, pistachios) – 2-3 tablespoons (finely chopped) Ghee – 1 teaspoon (optional, only to fry the paneer lightly) Method of preparation: Boil the milk: First of all, keep the milk in a heavy bottomed vessel to boil. Boil the milk on medium flame until it thickens slightly (about 15-20 minutes). Keep stirring occasionally so that the milk does not burn. Preparation of Paneer: Meanwhile, keep ready grated or mashed paneer. If you want, you can lightly fry the paneer in 1 teaspoon ghee (about 2 minutes), this will enhance the taste and the kheer will not become sticky. (This step is completely optional.) Mix the ingredients: When the milk becomes slightly thick, add sugar and cardamom powder to it and mix well, until the sugar dissolves. Add cheese: Now slowly add mashed cheese into it. Keep stirring continuously so that no lumps are formed. Cook it for 5-7 more minutes. Saffron and dry fruits: Now add soaked saffron and half chopped dry fruits. Mix well and cook for 2-3 minutes more. Garnish and serve: Turn off the gas. Your hot Paneer Kheer is ready! Take it out in a serving bowl and garnish with remaining dry fruits. You can serve it hot or cold as per your choice. Cold Kheer tastes more delicious. This delicious Paneer Kheer will enhance the taste of your festival this Diwali.
