Material
- Wheat flour – 2 cups
- Water – as required
- Salt – 1 tsp
- Oil/Ghee – for frying the parathas
For the filling:
- Eggs – 2
- Grated cheese – ½ cup (mozzarella/processed)
- Onion – 1 small, finely chopped
- Green Chilli – 1 finely chopped
- Coriander – 2 tbsp
- Black pepper – ½ tsp
- Salt – as per taste

- For this, first of all mix wheat flour, salt and little water in a big bowl and knead a soft and smooth dough. Cover it with a damp cloth for 10 minutes.
- Crack the eggs in a bowl and beat them well. Add onion, chilli, coriander, grated cheese, black pepper and salt to it and mix everything well.
- Make balls of dough and make a honeycomb shaped pari.
- Add 3–4 tablespoons of the egg-cheese mixture to the center of the above pari. Bring the edges together to close like a potli and gently roll to form a paratha. (Do not press too hard, the egg mixture may come out.)
- Heat a pan on medium heat. Place the paratha on the tawa and fry it with little oil/ghee on both sides.
- Fry the paratha evenly on both sides until golden brown. Make sure the egg mixture is completely set inside.
- Remove the hot Egg Cheese Paratha in a plate and serve with tomato ketchup, mint chutney or yogurt.
