Spicy Potato Canapes
Ingredients
For canapés:
- 1 cup Rajgira flour
- 2 boiled potatoes mashed
- rock salt as per taste
- Oil to fry
- 1 spoon Ghee
For spicy potatoes:
- 2 spoon Oil
- 1/2 spoon Cumin
- 1/3 spoon coriander powder
- 1/3 spoon chilli powder
- 1 spoon lemon juice
- 1 spoon green coriander finely chopped
- 2 boiled potatoes finely chopped
- rock salt as per taste
Instructions
Step 1: Knead the dough

Mix Rajgira flour, mashed potatoes, ghee and rock salt and knead a stiff dough for puri. Cover the dough and keep it aside for 10 minutes.

Step 2: Prepare the Canape Sheet

Make small balls of dough and roll them into thin puris. Cut out rounds with the help of a round mold or lid. Poke it lightly with a fork, so that it does not swell while frying.

Step 3: Fry the Canapés

Heat oil in a pan. Put the canapés on medium flame and deep fry them until they become golden and crisp. Take out and place on tissue paper.

Step 4: Add cumin seeds

Heat some oil in a non-stick pan. Add cumin seeds in it and let it crackle lightly.
Step 5: Prepare the Spicy Potatoes

Add chopped boiled potatoes in cumin tempering. Now add coriander-cumin powder, red chilli powder and rock salt and fry lightly for 2-3 minutes.

Step 6: Add lemon and coriander

Switch off the gas and add lemon juice and finely chopped green coriander to it.

Step 7: Garnish and serve

Place a small amount of pickled potatoes on each canapé and serve immediately. If you want, you can make canapés in advance and store them in an airtight container.

Notes
- To make the canapés crisp, knead the dough a little hard. Having too soft a dough can cause the canapés to become soggy after frying. After kneading the dough, it becomes easier to roll it by keeping it covered for some time.
- When rolling out canapés, do not make them too thin. Due to their light thickness, they do not break while frying and become nicely crunchy. After cutting into rounds, it is important to make small holes with a fork, this will prevent the canapés from puffing up.
- The oil should not be too hot. By frying on medium flame, the canapés get cooked properly from inside and the color also comes to the right level. Don’t add too many canapés at once.
- While making potato stuffing, do not mash the potatoes completely. Keeping it in light pieces makes it taste better and also makes it easier to serve on canapés.
- Always add lemon juice and green coriander at the end. This maintains freshness. Keep the potato filling on canapés at the time of serving, this will keep them crisp for a longer time.
