UP Style Tehri Recipe: No one likes to cook food in summer and stand in the kitchen for hours and in such a situation, one feels like preparing a dish quickly and getting free from kitchen work. In such a situation, the famous Tehri of Uttar Pradesh is a very good option. UP Style Tehri is an easy, tasty and quick dish, which you can prepare for lunch or dinner. Its yellow color due to turmeric and the taste of local spices make it different from pulao. Let us know its easy recipe.
Material
Basmati rice-1 cup (washed and soaked for 20 minutes)
Potatoes-2 medium (cut into cubes)
Carrot-1 (chopped)
Peas-½ cup
Onion-1(finely chopped)
Tomato-1(finely chopped)
Green chilli-2
Ginger-garlic paste-1 tsp
Turmeric powder-1 tsp
Red chilli powder-½ tsp
Coriander powder-1 tsp
Garam masala-½ tsp
bay leaf-1
Cinnamon- 1 small piece
Clove-2
Cumin-1 tsp
Oil or ghee – 2 tbsp
Salt – as per taste
Water-2 cups
Coriander to garnish
Method
1- Heat oil or ghee in a cooker or heavy bottomed vessel. Add cumin, bay leaves, cinnamon and cloves and fry for a few seconds.
2-Add onion and fry till it turns golden. Add ginger-garlic paste and green chilli and cook for 1 minute.
Add tomatoes and fry until soft.
3-Now add turmeric, red chilli, coriander powder and salt and mix. Add potatoes, carrots and peas and fry with spices for 2-3 minutes.
4-Add soaked rice and fry for 1 minute while mixing slowly. Add 2 cups of water and mix well.
5-Cook in pressure cooker till 1-2 whistles. If you are making it in a vessel then cover it and cook on low flame for 15-18 minutes. After the pressure is released, add garam masala and puff it up gently. Garnish with green coriander and serve with raita, pickle or papad.
Tips to enhance taste
1- In the traditional Tehri of UP, the taste of potato is considered to be the most special, hence definitely add potato.
2- Adding a little more turmeric gives the original color and taste of tahari.
3-Using desi ghee further enhances its taste.
4- If you wish, you can also add cauliflower, beans or capsicum.
