Have you ever tasted the famous Maddur Vada of Karnataka? Made of onion, rice flour and rava, this snack tastes delicious. Crunchy on the outside and soft on the inside, these snacks are a perfect combination with evening tea. This can easily be made at home.

Ingredients for Maddur Vada

Four onions, salt as per taste, oil for frying, curry leaves 5–6, cashew nuts 2 tbsp, almonds 2 tbsp, white sesame seeds half tbsp, poppy seeds half tbsp, cumin 1 tsp, green chillies 2–3, upma rava 2 tbsp, maida half cup, rice flour half cup, black pepper half tsp, hot oil 2–3 tbsp

Method to make Maddur Vada

    • To make Maddur Vada, first of all, cut the onion in half and cut it into slices. Keep in mind that while cutting the onion, its layers should be separated. Now, place the chopped onion in a large bowl and then add salt to it and mash it lightly with your hands. Adding salt will remove the water from the onion. After some time, throw away the salt water that has come out of the onion.
    • Now, in the same bowl add fried curry leaves, finely chopped cashew nuts, almonds, white sesame seeds, poppy seeds, cumin seeds and chopped green chillies, upma rava and mix well; Rava will absorb all the water from onion. Next, add all purpose flour, rice flour, salt and crushed black pepper and add two to three tablespoons of hot oil and mix together. Also keep kneading gently until it comes together like a dough. Keep in mind that water should not be used to knead it.
    • When it is kneaded like dough, take some mixture and make a ball. When all the balls are ready, flatten them one by one by placing them between the palms. Now, drop the flattened vadas into hot oil and fry till they turn golden in colour. Your hot vadas are ready. Serve them with coconut chutney.
