Often relegated to side dishes or parathas, peas can transform into a delightful barfi when combined with khoya, milk, and ghee. This treat boasts a pistachio-like hue, a royal flavor, and resembles the barfis available in stores. Let’s dive into the preparation of Matar Barfi.
Ingredients for Matar Barfi:
Peeled green peas - 2 cups
Full cream milk - 1/2 cup
Khoya - 1 cup
Sugar - 3/4 cup (adjust to taste)
Desi ghee - 4 tablespoons
Cardamom powder - 1/2 teaspoon
Chopped pistachios or cashews - for garnishing
Simple Steps to Prepare Matar Barfi:
Step 1 - Rinse the peeled green peas and blend them into a smooth paste using a little milk. A finer paste will enhance the flavor of the barfi.
Step 2 - In a pan, heat the ghee and add the pea paste. Cook over medium heat, stirring continuously until the raw pea aroma dissipates.
Step 3 - Incorporate the khoya and mix thoroughly. Once the khoya melts and integrates into the pea mixture, add the sugar.
Step 4 - When the mixture thickens and starts to separate from the pan, add the cardamom powder and continue cooking for a few more minutes.
Step 5 - Transfer the mixture onto a ghee-greased plate.
Step 6 - Once the heat is off, spread the mixture evenly on the greased plate and top with dried fruits. Allow it to cool slightly before cutting into your preferred shapes.
