Recipe to make Bhature from wheat flour
Material
2 cups wheat flour
2 tbsp semolina
½ cup curd
½ tsp baking soda
½ tsp salt
1 tsp sugar
1 tbsp oil
lukewarm water as per need
oil for frying
Method of preparation
Add wheat flour and semolina in a large bowl. Mix salt, sugar and baking soda in it. Now add curd and 1 tablespoon oil and mix everything well. Now knead a soft dough by adding lukewarm water little by little. Keep in mind that the dough should not be too hard, because bhaturas puff up better with soft flour.
Cover the kneaded dough with a little oil and keep it aside for about 1 to 2 hours. This will make the dough a little fermented and the bhatura will become more soft. After rest, knead the dough lightly and make small lemon sized balls.
Roll each ball lightly with a rolling pin. Try not to make the bhaturas too thin, only then they will puff up properly. Put oil in the pan and heat it on medium to high flame. The oil should be well heated.
Now put the bhatura in oil one by one and fry while pressing lightly. Bhatura will start swelling automatically. Fry until golden on both sides. Take out the hot, puffed Bhature in a plate and serve with chickpeas, pickles and onion.
